There are no U.S. grade standards for Celeriac. These instructions have been developed by the Specialty Crops Inspection Division to assist officially licensed inspectors in making inspections, writing certificates and to assist in the proper identification of specialty type fruits and vegetables.
Celeriac (Celery Root, Apio Root) belongs to the same family as Pascal Celery and is grown for the globe shaped root crown instead of the stalk. It originated in the Mediterranean area and is generally used as a flavoring for soups but can be used with other types of foods also.
