Tomato Food Safety Audit Protocol

Tomato Food Safety Audit Protocol

The tomato industry initiated the Food Safety Programs and Auditing Protocol for the Fresh Tomato Supply Chain in October 2008, with the goal of harmonizing food safety audit standards for the fresh tomato supply chain. In February 2021, USDA amended the USDA Harmonized GAP and USDA Harmonized GAP Plus+ audit programs to include the optional addenda for the Tomato Food Safety Audit Protocol which may be requested by tomato operations.  The intent of these standard updates is to replace the stand alone USDA Tomato Food Safety Protocol audits.  These changes will be implemented effective May 1, 2021.

Information on USDA’s Harmonized GAP audit program are located on the USDA website at:  Harmonized GAP | Agricultural Marketing Service (usda.gov).  The Summary of Changes to the Harmonized Standard (pdf) resource includes Tables 3- 6, which are requirement alignment tables, and Tables 7-10, which have summary of changes to tomato specific requirements.  These are intended to assist auditees in preparing for a USDA Harmonized GAP audit with Tomato Audit Protocol Addenda.

The current USDA Tomato Audit Protocol Checklists, listed below, will remain in effect through April 30, 2021.
