Frozen Tomato Juice Grades and Standards

Grades of Frozen Tomato Juice

  1. U.S. Grade A is the quality of tomato juice or tomato juice from concentrate that meets the applicable requirements of Tables I or II.
  2. U.S. Grade B is the quality of tomato juice or tomato juice from concentrate that meets the applicable requirements of Tables I or II.

  3. Substandard is the quality of tomato juice or tomato juice from concentrate that fails to meet the requirements for "U.S. Grade B."

Tomatoes on the Vine Grades and Standards

Grades of Tomatoes on the Vine

  1. U.S. No. 1 consists of tomatoes on the vine of similar varietal characteristics (except when marked as mixed type or mixed variety), which are mature but not overripe or soft, clean, fairly well formed; which are free from decay, sunscald, and freezing injury, and free from damage caused by bruises, cuts, shriveling, puffiness, catfaces, growth cracks, scars, disease, insects, or other means (See §51.2167.). The tomatoes shall be attached to stems/vines.

Tomato Sauce Grades and Standards

Tomato sauce is the concentrated product prepared from the liquid extracted from mature, sound, whole tomatoes; the sound residue from preparing such tomatoes for canning; the residue from partial extraction of juice; reconstituted or remanufactured tomato paste; or any combination of these ingredients to which is added salt and spices. One or more nutritive sweetening ingredients, a vinegar or vinegars, onion, garlic, or other vegetable flavoring ingredients may be added. The food is preserved by heat sterilization (canning), refrigeration, or freezing.

Canned Tomatoes Grades and Standards

Grades of Canned Tomatoes

  1. U.S. Grade A is the quality of canned tomatoes that meets the applicable requirements of Tables I, II, III, IV, and V of §52.5170, and scores not less than 90 points. 
  2. U.S. Grade B is the quality of canned tomatoes that meets the applicable requirements of Tables I, II, III, IV, and V of §52.5170, and scores not less than 80 points.
