Southern Peas for Processing Grades and Standards

Grades of Southern Peas for Processing

  1. U.S. No. 1 consists of southern peas which are free from extraneous material. The pods are at least fairly well matured but not excessively mature, and are fairly fresh and free from decay. The seeds are of similar varietal characteristics, free from sting scars, insects, insect eggs and decay, and free from damage caused by discoloration, splits, cracked skins or other means.

  1. U.S. Fancy shall consist of pea pods of similar varietal characteristics which are clean, well formed, fresh, young and tender, good color, free from broken, decay, flabby and mold, and from injury by blistering, bruising, cracks, cuts, dirt, discoloration, disease, freezing, foreign material, insects, pitted, scars, shriveling, yellowing or mechanical or other means.

Fresh Peas Grades and Standards

Grades of Fresh Peas 

  1. U.S. No. 1 shall consist of pods of peas of similar varietal characteristics which are not overmature or excessively small, not badly misshapen or watersoaked, and which are fairly well filled, fresh, firm, free from decay, and from damage caused by black calyxes, freezing, splitting, hail, dirt, leaves, or other foreign matter, mildew, or other diseases, insects, or mechanical or other means.

Frozen Peas and Carrots Grades and Standards

Frozen peas and carrots is the product prepared from the fresh, clean, sound, immature seed of the common garden pea (Pisum sativum) and the fresh, clean, sound roots of the carrot plant (Daucus carota sativa). The peas are prepared by shelling, washing, sorting, and blanching. The carrots are prepared by washing, sorting, trimming, peeling, cutting into approximate cubes, and blanching. The prepared ingredients are properly drained and mixed; are frozen in accordance with good commercial practice; and are maintained at temperatures necessary for the preservation of the product.

Canned Peas and Carrots Grades & Standards

Canned peas and carrots is the product which has been properly prepared from clean, sound, succulent garden peas and clean, sound carrots. The peas and carrots are packed in a suitable packing medium with or without the addition of salt, sugar, or other ingredient(s) permissible under the Federal Food, Drug, and Cosmetic Act; and are sufficiently processed by heat to assure preservation of the product in hermetically sealed containers.

Grades of Canned Peas

  1. U.S. Grade A is the quality of canned peas that:
    • Meets the following prerequisites in Table II of Section 52.2288 in which the canned peas:
    1. ​Have similar varietal characteristics;
    2. Have a good appearance;
    3. Have not more than one (1) percent, by count, blond peas;
    4. Have a good liquor; and
    5. Have a good flavor and odor.
    6. Is within the limits for defects as specified in Tables III, IV, and V of Section 52.2288, as applicable.
