The market statistics presented in this section are: the amount, measured in pounds, of raw milk received by regulated handlers from producers; the component (butterfat, nonfat solids, protein (true), and other solids) tests of this raw producer milk; and, the somatic cell count (a measure of milk quality) of this raw producer milk. Other market statistics include the regulated handlers’ utilization, again measured in pounds, of this raw producer milk in the four classes of milk use established under the order. These classes are: I, fluid milk products (products intended to be used as a beverage); II, principally cream products, cottage cheese, ice cream and related products, and other food uses; III, hard and spreadable cheeses; and IV, butter and dried milk products.
